When liquid nitrogen at -196℃ evaporates, it will quickly lower the temperature of the surrounding air, causing the water vapor in the air to condense into "fog", which becomes ethereal, just like when you exhale in the snow in Harbin, you suddenly feel "full of ethereal air".

Is the Internet celebrity smoking ice cream dangerous to the body?

Nitrogen is a food processing aid and a permitted food additive. It is non-toxic, tasteless and harmless and can be applied to all kinds of food without limiting the residual amount. Many packaged foods we buy in supermarkets look bulging because they are filled with nitrogen.

It can extend shelf life by inhibiting the growth of aerobic bacteria, inhibiting the oxidation of some ingredients in food, and preventing crispy, crunchy treats from turning into a bag of crumbly crumbs.

Liquid nitrogen is the form of nitrogen at -196°C. It is inert, colorless, odorless, non-corrosive, and non-toxic, but that doesn't mean it's not dangerous. Liquid nitrogen absorbs a lot of heat when it vaporizes. If a person is in contact with it for more than 2 seconds, it will directly cause frostbite and it will be irreversible.

How to make liquid nitrogen ice cream

Given that liquid nitrogen may cause frostbite, I personally do not recommend trying to make liquid nitrogen ice cream at home. If you are interested, you can use relatively safe dry ice. Since dry ice sublimates at around -78°C, the whole process is very similar to liquid nitrogen ice cream, with smoke everywhere.

1. Buy edible dry ice, break it into small pieces, and grind it into powder using a food processor. Pour it out and set aside.

2. Prepare the ice cream base and pour it into a food processor to mix it, or you can mix it by hand. The texture will be more uniform if it is mixed by a machine.

3. Add dry ice powder one spoonful at a time while stirring until the ice cream is formed.
