1. Appearance: Both fresh abalone and field snails have a shell, but the mouth of the abalone shell is very large, with about 9 small holes on the edge.

2. Foot: The foot of abalone can be seen after the shell is removed. Both abalone and chiton have well-developed feet with flat soles. The foot of abalone is slightly like an egg, with one side smooth. The periphery of the foot of chiton is rough. There are 8 shell plates in the center of the back of chiton, and there are 8 deep marks after drying. Therefore, the one with 8 deep marks on the back is a fake abalone.

Which kind of dried abalone is better?

There are four types of abalone available in the market: fresh abalone, dried abalone, frozen abalone and canned abalone. Dried abalone is more convenient for travelers to carry and is sold in seafood shops. The famous ones are net abalone, hemp abalone and Jipin abalone. Net abalone is larger in size, with a wide bottom edge, thick and hard abalone body, and a dark brown color; Hema abalone is thinner, lighter in color, softer in body, and has obvious small holes on the edge; Jipin abalone has a slightly curly body, thinner body, lighter color, and a line mark in the middle. Net abalone is of better quality than the other two.
