2. Cooking steps:

1. Fry black sesame seeds and walnut kernels separately until fragrant. Fry the black sesame seeds for 2-3 minutes (when you hear the popping sound of sesame seeds and smell the aroma), and fry the walnut kernels for 1-2 minutes. Remove from the pan when they turn slightly yellow and have an aroma. Be careful not to burn them.

2. Crush the rock sugar into rock sugar powder for later use (some soymilk machines have a powdering function, which can be directly crushed into powder)

3. Use a small brush to apply a little sesame oil evenly on the inner surface of the stainless steel plate and set aside.

4. Add rice wine to a stainless steel pot, and then add rock sugar powder and donkey-hide gelatin powder (add donkey-hide gelatin powder after rock sugar powder is completely dissolved). Start heating with a slow fire, stirring constantly to make it slowly dissolve. During the stirring process, pay attention to the boiling state. When you see the foam change from light to dark, speed up the stirring and control the heat at 600W-800W. (It will take about 20 minutes)

5. The donkey-hide gelatin liquid in the pot will become thicker and thicker. Use a spatula to pick up the donkey-hide gelatin liquid in the pot. When it changes from several lines to one line (commonly known as hanging flags), you can stop the fire, add the fried black sesame seeds and walnut kernels, and then speed up the stirring to make it uniform.

6. Pour the prepared donkey-hide gelatin paste into a stainless steel bowl brushed with sesame oil (the oil is used to prevent sticking), flatten the surface and put it in the refrigerator to cool. After it hardens into shape, take it out and cut it into small pieces with a knife before eating.

4. Note: Be sure to stir constantly during the cooking process to prevent it from sticking to the pan and becoming mushy (very important).
