Clean the pig's trotters and chop them into pieces. Soak the peanut kernels in warm water. Cut the ginger into slices. Remove the stems of the mushrooms and wash them. Boil water in a pot. When the water boils, put in the pig's trotters and cook over medium heat until all the blood is gone. Remove from the pot and set aside. Take a stewing pot, add pig's trotters, peanuts, ginger, mushrooms, salt, Shaoxing wine, add appropriate amount of clear soup, cover, and stew for about 2 hours before serving.
