The origin of candied fruit

The origin of candied fruit is said to date back to the Han and Tang Dynasties. It flourished in the Qing Dynasty. There were many records about the production of preserved fruit (candied fruit) at that time. Since honey used for pickling was very precious in ancient times, candied fruit was also regarded as a treasure of the palace. Take the oval-shaped golden jujube, a specialty of Yilan, for example. It is also known as kumquat or kumquat. Most people often confuse kumquat with the round kumquat that is often used to make kumquat lemon drinks because kumquat and kumquat have similar pronunciations. It is said that the golden jujube cake was created by Zhu Caizhe, a magistrate during the Daoguang period of the Qing Dynasty. When he saw the golden jujubes planted in Yilan at that time, the Kavalan people did not know how to store and eat them, so they let the fruits fall to the ground and rot. He felt very sorry, so he taught everyone the technology of pickling golden jujubes and made them into storable golden jujube cakes, which have been passed down to this day.

The golden dates are grown in abundance in Yilan.
