I like to drink lemon water, firstly because it tastes good, and secondly because I think it can help me supplement some vitamin C.

However, if you cut a lemon every day, you can't use it up. If it's left overnight, it will feel stale. So recently I bought some dried lemon slices to replace fresh lemons.

But here comes the question, some people say that you can't drink any vitamin C when you soak dried lemon slices in water, is that true? Then why do they all taste sour?

Lemon is rich in many vitamins needed by the human body, and vitamin C is its highlight. Fresh lemons are very high in vitamin C, about 250 mg/100 g.

However, if you use dried lemon to make water, the vitamin C in it will be lost in large quantities and it will be almost impossible to drink.

This is because high temperature, freezing, water shortage and other environments will cause a large loss of vitamin C.

Therefore, this also reminds us that if we really want to take in vitamin C from lemons, it is best to soak fresh lemon slices in warm water (generally the water temperature is about 60°C).

If the water temperature is too high, not only will the vitamin C be destroyed, but the high temperature will also cause the lemon peel to release more tannins, affecting digestion, absorption and taste.

In addition, we would like to remind everyone that for daily drinking, it is best to make light lemon water - about one large slice of lemon, soaked in 1000 ml of water.

Too concentrated lemon water will erode the enamel on the surface of the teeth, making the teeth fragile and sensitive. It will also aggravate stomach discomfort for those who suffer from gastroesophageal reflux and gastric ulcers.

As for what you said, the sour taste of water soaked with dried lemon slices is actually due to an ingredient called citric acid, not vitamin C.
