2. Color identification. Fresh and high-quality button mushrooms have white or gray caps, and their stems are also white. If the button mushrooms are not fresh enough, they will turn yellow easily, which is mostly caused by the mushrooms being old or sprayed with water.

3. Appearance selection. It is best to buy mushrooms with intact surfaces, no rot in shape, no water stains, and no stickiness when touched by hand. In addition, mushroom caps with too large diameters indicate that they are old and affect the taste.

4. Smell. If you smell a sour or smelly smell in mushrooms, they are probably rotten, so you should pay special attention when buying them.

How to clean mushrooms

Many people will find that when cleaning button mushrooms, they always feel that the mucus on the surface cannot be washed clean no matter how hard they try, and it is not very reassuring to eat them. The button mushrooms should be soaked for a period of time before washing. You can use rice water or salt water to soak for about 10 minutes, and then wash them continuously with running water. Especially the pedicles of the button mushrooms are the place where mud and sand are most likely to adhere. Be sure to wash them carefully. If you still feel that they are not clean, you can remove the pedicles. Be careful not to rub them vigorously when washing, because the button mushrooms themselves are relatively fragile. Rubbing them vigorously will cause the button mushrooms to break, and the nutritional value and taste will be greatly reduced.

When cleaning shiitake mushrooms, it is best to soak them in hot water first, soften them and squeeze out the water (the water used for the first soaking of mushrooms must be retained to settle the mud and sand and keep the clear soup for later use).
