1. Boiled cabbage

Ingredients: 2000g cabbage heart, 300g lean pork, wine, salt, soy sauce, starch, eggs

Method: Wash the cabbage and cut into pieces, wash and slice the lean pork, add cooking wine, salt, soy sauce, starch and eggs and mix the pork well. Put vegetable oil in a pot and heat it to 50%, then fry the peppercorns, then add the bean paste and pour into the broth. After the pot boils, add onions, cooking wine, salt and pepper to season. Put the pork into the pot and add cabbage, and remove from the pot after cooking.

2. Cabbage soup

Ingredients: 2000 grams of cabbage heart, a piece of frozen tofu, 100 grams each of red and green bell peppers, thick cucumber juice, salt, and chicken essence.

Method: Cut the cabbage heart and red bell pepper into 4 cm long strips. Marinate the cabbage hearts, red bell pepper shreds and frozen tofu with fine salt for 20 minutes, drain the brine, and add MSG and cucumber juice. When the water in the pot boils, pour in the above ingredients, add salt and chicken essence.

3. Assorted Cabbage

Ingredients: cabbage, enoki mushrooms, carrots, shiitake mushrooms, salt, chicken essence, and pepper.

Method: Wash the cabbage, bring water to a boil, put the cabbage slices into the pot and blanch until soft. Boil the enoki mushrooms and shiitake mushrooms in water until cooked, then take out and cut into thin strips. Marinate shredded enoki mushrooms and shiitake mushrooms with chicken stock, salt and pepper for 10 minutes. Mix all the dishes together and add chicken essence and salt to season.

Method: Cut the cabbage into short strips and prepare chopped green onion, ginger and garlic; pour a proper amount of oil into a hot pan, sauté the green onion, ginger and garlic, then add the shredded cabbage and stir-fry. After the soup comes out, add water and rice, change to medium heat and simmer until the rice porridge becomes sticky; add a small amount of salt before serving.

5. Cabbage stew with tofu

Ingredients: cabbage, tofu, salt, chicken essence, pepper, ginger, and onion.

Method: Cut the tofu into mahjong-sized pieces, blanch them in boiling water to remove the bean smell; cut the cabbage into slices diagonally. Add a little oil to the pan, add ginger and onion when it is 60% hot, stir-fry the cabbage for one minute, then add the tofu and continue stir-frying for one minute. Add appropriate amount of water, pepper powder and chicken essence, cook for 5 minutes, and season with salt.

6. Stir-fried Chinese cabbage with black fungus

Ingredients: cabbage, fungus, onion, ginger, pepper, star anise, salt, and chicken essence.

Method: Slice the cabbage with your hands, soak the fungus in warm water for five minutes to soften it, remove the roots, wash it, and cut the green onion and ginger into shreds. Put oil in the pot and heat it on low heat. Add peppercorns and star anise and stir-fry until fragrant. Add onions and ginger and stir-fry until fragrant. Then add cabbage slices and stir-fry evenly over high heat. When the cabbage slices are fried until slightly soft, pour in the dark soy sauce and stir-fry evenly, add appropriate amounts of sugar and vinegar; add the soaked black fungus, stir-fry for a few minutes, sprinkle a little salt and chicken essence and stir-fry evenly, then serve.
